Description

A hearty and healthy soup loaded with chunks of turkey, fresh spinach, and vegetables, perfect for a comforting meal.


Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 4 cups cooked turkey, cubed
  • 6 cups chicken or turkey broth
  • 2 cups fresh spinach, roughly chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 1 cup diced tomatoes (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the onion and garlic; sauté until translucent.
  3. Stir in carrots and celery; cook for 5 minutes until slightly softened.
  4. Add the cooked turkey, broth, thyme, and oregano.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Stir in the spinach and diced tomatoes if using, and cook for an additional 5 minutes.
  7. Season with salt and pepper to taste before serving.

Notes

  • Use leftover turkey for quicker preparation.
  • Add more broth if you prefer a thinner soup.
  • Can substitute spinach with kale or Swiss chard.
