- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 3 carrots, sliced
- 2 celery stalks, sliced
- 4 cups cooked turkey, cubed
- 6 cups chicken or turkey broth
- 2 cups fresh spinach, roughly chopped
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- 1 cup diced tomatoes (optional)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the onion and garlic; sauté until translucent.
- Stir in carrots and celery; cook for 5 minutes until slightly softened.
- Add the cooked turkey, broth, thyme, and oregano.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Stir in the spinach and diced tomatoes if using, and cook for an additional 5 minutes.
- Season with salt and pepper to taste before serving.
Notes
- Use leftover turkey for quicker preparation.
- Add more broth if you prefer a thinner soup.
- Can substitute spinach with kale or Swiss chard.
