For the Chocolate Cookies:
- 2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup buttermilk
For the Creamy Filling:
- 1/2 cup unsalted butter, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup marshmallow fluff
Instructions
- Preheat Oven: Preheat the oven to 350°F (180°C) and line baking sheets with parchment paper.
- Make the Chocolate Cookies: In a bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt. In another bowl, cream butter and sugar until light and fluffy. Add egg and vanilla, then alternate adding the dry ingredients and buttermilk, mixing until well combined.
- Bake: Drop spoonfuls of batter onto the prepared baking sheets and bake for about 10-12 minutes. Allow to cool completely.
- Prepare the Filling: Cream butter and powdered sugar until smooth. Add vanilla and marshmallow fluff, beating until light and fluffy.
- Assemble: Spread filling on the flat side of a cookie, then top with another cookie to create a sandwich. Repeat with remaining cookies and filling.
Notes
- You can add a twist by rolling the edges of the assembled pies in mini chocolate chips or sprinkles.
