For the filling:

  • 3 (8-ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1/2 cup sour cream
  • 1/2 cup heavy cream
  • 8 ounces semisweet chocolate, melted and slightly cooled
  • 3 large eggs
  • 1 teaspoon vanilla extract

For the topping:

  • 1 1/2 cups fresh strawberries, halved
  • 1/2 cup semisweet chocolate chips
  • 2 tablespoons heavy cream

Instructions

  1. Preheat the oven: Preheat to 325°F (160°C) and grease a 9-inch springform pan.
  2. Prepare the crust: Combine cookie crumbs, sugar, and melted butter. Press into the pan and bake for 8–10 minutes.
  3. Make the filling: Beat cream cheese, sugar, sour cream, heavy cream, and melted chocolate. Add eggs one at a time, then vanilla. Pour over crust.
  4. Bake: Bake for 55–65 minutes until just set. Cool in the oven, then refrigerate.
  5. Prepare the topping: Melt chocolate chips and cream, then pour over chilled cheesecake. Top with strawberries.
