Ingredients

Units Scale

Pecan Clusters:

  • 2 cups pecan halves, lightly toasted

Caramel Filling:

  • 1 (11-ounce) bag soft caramels (about 35 caramels), unwrapped
  • 2 tablespoons heavy cream

Chocolate Coating:

  • 1 1/2 cups semi-sweet chocolate chips
  • 1 tablespoon coconut oil or vegetable shortening

Garnish:

  • Sea salt for garnish (optional)

Instructions

  1. Prepare Pecan Clusters: Line a baking sheet with parchment paper. Arrange pecan halves in small clusters of 3 to 4 nuts each, leaving space between them.
  2. Make Caramel Filling: In a microwave-safe bowl, combine the unwrapped caramels and heavy cream. Microwave in 30-second intervals, stirring in between, until the mixture is smooth and melted. Spoon about 1 teaspoon of the caramel mixture over each pecan cluster. Let sit for about 10 minutes to firm up slightly.
  3. Coat with Chocolate: In another microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 30-second intervals, stirring until smooth. Spoon or drizzle the melted chocolate over the caramel-covered pecans, spreading gently to cover. Sprinkle with sea salt if desired.
  4. Set and Serve: Allow clusters to set at room temperature or refrigerate for quicker setting.

Notes

  • Store in an airtight container at room temperature for up to 1 week, or refrigerate for longer freshness.
  • You can use dark or milk chocolate based on preference.
