For the crust:
1 1/2cups chocolate cookie crumbs (such as Oreos, crushed with filling)
1/4cup melted butter
For the peanut butter layer:
8oz cream cheese, softened
1/2cup creamy peanut butter
1/2cup powdered sugar
1cup whipped topping (like Cool Whip)
For the chocolate layer:
1 (3.9 oz) package instant chocolate pudding mix
1 1/2cups cold milk
For topping:
1cup whipped topping
2 tablespoons mini chocolate chips or chopped peanut butter cups (optional)
Instructions
For the crust: In a medium bowl, mix the chocolate cookie crumbs with melted butter until combined. Press firmly into the bottom of a 9×9-inch dish to form the crust. Chill while you prepare the next layers.
For the peanut butter layer: In another bowl, beat the cream cheese, peanut butter, and powdered sugar until smooth. Fold in 1 cup of whipped topping until light and fluffy. Spread this layer over the chilled crust.
For the chocolate layer: In a separate bowl, whisk together the pudding mix and cold milk until thickened, about 2 minutes. Spread the chocolate pudding evenly over the peanut butter layer.
For topping: Top with the remaining whipped topping and sprinkle with mini chocolate chips or chopped peanut butter cups if desired. Refrigerate for at least 4 hours, or until set.
Notes
For extra crunch, add crushed peanuts between layers.
You can double the recipe and prepare in a 9×13-inch pan for a crowd.
