Instructions
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, cream together the butter and powdered sugar until light and fluffy.
Add orange zest, vanilla extract, and orange extract if using, and mix to combine.
In a separate bowl, whisk together the flour, cocoa powder, and salt.
Gradually add the dry ingredients to the butter mixture, mixing until a soft dough forms.
Roll the dough out on a lightly floured surface to about 1/4-inch thickness and cut into desired shapes.
Place cookies on the prepared baking sheet and bake for 10-12 minutes, or until edges are set.
Let cool completely on a wire rack. If desired, dip half of each cookie in melted dark chocolate and let set.
