  • 4 oz semi-sweet or bittersweet chocolate, chopped
  • 2 tablespoons unsalted butter
  • 2 tablespoons granulated sugar
  • 2 large egg yolks
  • 1/2 teaspoon vanilla extract
  • pinch of salt

For Garnish:

  • whipped cream
  • chocolate shavings (optional)

Instructions

  2. Prepare Egg Yolks: In a separate bowl, whisk egg yolks with sugar until pale and thickened.
  3. Combine Mixtures: Slowly stir chocolate into egg yolk mixture until fully combined.
  4. Whip Cream: In a chilled bowl, beat cream with vanilla and salt until soft peaks form.
  5. Fold: Gently fold whipped cream into chocolate mixture until smooth.
  6. Chill: Spoon mousse into glasses, chill for 1–2 hours before serving. Garnish if desired.

Notes

  • For a richer mousse, use dark chocolate with at least 60% cocoa.
  • Ensure chocolate mixture is not too hot when adding to egg yolks to prevent curdling.
