  • Green food coloring (optional)

Chocolate Coating:

  • 1 cup semi-sweet or dark chocolate chips
  • 1 tablespoon coconut oil or shortening

Instructions

  1. Mint Cream: In a medium bowl, beat together powdered sugar, softened butter, heavy cream, and peppermint extract until a thick dough forms.
  2. Add a drop or two of green food coloring if desired and mix until the color is even.
  3. If the mixture is too dry, add a tiny splash of cream; if too sticky, add more powdered sugar.
  4. Roll into 1-inch balls, then flatten into discs.
  5. Place on a parchment-lined baking sheet and chill in the freezer for 20–30 minutes.
  6. Chocolate Coating: Meanwhile, melt chocolate chips with coconut oil in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  7. Dip each chilled mint cream into the melted chocolate using a fork, tapping off excess.
  8. Return to the baking sheet and refrigerate until set, about 15 minutes.
