For the crust:

  • 1 1/2 cups chocolate cookie crumbs (like Oreo, without filling)
  • 1/4 cup unsalted butter, melted

For the filling:

  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1/2 cup sour cream

For the chocolate swirl:

  • 4 oz semisweet chocolate, melted and slightly cooled

Instructions

  1. Preheat the oven: Preheat the oven to 325°F (163°C). Grease a 9-inch springform pan and wrap the bottom in foil if baking in a water bath.
  2. Prepare the crust: Combine chocolate cookie crumbs and melted butter. Press into the bottom of the pan.
  3. Make the filling: Beat cream cheese and sugar, then add vanilla, eggs, and sour cream. Reserve 1 cup of batter and mix with melted chocolate.
  4. Assemble the cheesecake: Pour plain batter over crust. Spoon chocolate batter on top and swirl gently with a knife.
  5. Bake: Bake for 50–60 minutes until almost set. Cool in the oven, then refrigerate for at least 4 hours.

Notes

  • For clean slices, warm a sharp knife under hot water between cuts.
  • You can drizzle with chocolate ganache or serve with whipped cream if desired.
