For the Cookie Dough:
1cup freeze-dried strawberries, finely crushed
1/2cup unsalted butter, softened
1/2cup granulated sugar
1/2cup brown sugar, packed
1 large egg
1 teaspoon vanilla extract
1 1/2cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1cup white chocolate chips
For Dipping:
8oz dark chocolate, melted
additional crushed freeze-dried strawberries, for garnish (optional)
Instructions
Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
Cream the butter and sugars: In a large bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy.
Add egg and vanilla: Mix in the egg and vanilla extract until well combined.
Stir in strawberries: Stir in the crushed freeze-dried strawberries.
Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add to the wet mixture.
Add white chocolate chips: Fold in the white chocolate chips.
Bake: Scoop dough onto baking sheet and bake for 10–12 minutes until golden.
Dip in chocolate: Dip half of each cookie in melted dark chocolate and let set.
Garnish: Sprinkle with additional crushed strawberries if desired.
Cool and serve: Allow the chocolate to harden before serving.
Notes
You can substitute white chocolate chips with milk or semi-sweet chocolate chips.
