3 tablespoons unsalted butter
1 (10-ounce) bag mini marshmallows
1/2 teaspoon almond extract
6cups Rice Krispies cereal
1cup chopped maraschino cherries (well-drained and patted dry)
1cup semi-sweet chocolate chips
1 tablespoon coconut oil or vegetable shortening
Instructions
Prepare the Base: Lightly grease a 9×13-inch baking dish or line it with parchment paper.
Melt Butter and Marshmallows: In a large pot, melt the butter over low heat. Add the marshmallows and stir until completely melted and smooth. Stir in the almond extract.
Add Cereal and Cherries: Remove from heat and quickly fold in the Rice Krispies cereal and chopped maraschino cherries until well combined.
Press into Pan: Press the mixture evenly into the prepared pan using a greased spatula or wax paper. Let cool for 15–20 minutes.
Melt Chocolate: In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each, until smooth and fully melted.
Top with Chocolate: Drizzle or spread the melted chocolate over the cooled treats. Let the chocolate set at room temperature or refrigerate until firm.
Serve: Cut into squares and serve.
Notes
Make sure the cherries are very well-drained and patted dry to prevent the treats from getting soggy.
For an extra pop of flavor, sprinkle with sea salt before the chocolate sets.
