  • 1 cup unsalted butter, softened
  • 1 1/4 cups granulated sugar
  • 1/2 cup packed brown sugar
  • 3 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1 cup sour cream
  • 1/2 cup hot brewed coffee

For the Crumb Topping:

  • 3/4 cup all-purpose flour
  • 1/3 cup brown sugar
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon espresso powder
  • 6 tablespoons unsalted butter, melted

For the Optional Glaze:

  • 1/2 cup powdered sugar
  • 23 teaspoons brewed coffee or milk

Instructions

  1. Preheat the oven: to 350°F (175°C). Grease and flour a 9×13-inch baking pan or line it with parchment paper.
  2. Prepare dry ingredients: Whisk together flour, cocoa powder, espresso powder, baking powder, baking soda, and salt in a medium bowl.
  3. Mix wet ingredients: Cream butter, granulated sugar, and brown sugar in a large bowl. Add eggs one at a time, then vanilla. Mix in sour cream.
  4. Combine wet and dry: Gradually add dry ingredients to wet, then stir in hot coffee. Pour into pan.
  5. Make crumb topping: Mix flour, brown sugar, cocoa, and espresso. Stir in melted butter and sprinkle over batter.
  6. Bake: for 35–40 minutes. Cool in pan.
  7. Optional glaze: Mix powdered sugar with coffee or milk and drizzle over cooled cake.
