1 ripe banana (mashed)
1/2cup unsalted butter (softened)
1/2cup brown sugar
1/4cup granulated sugar
1 large egg
1 teaspoon vanilla extract
Dry Ingredients:
1 1/2cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
Mix-ins:
1cup semisweet chocolate chips
Instructions
Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
Cream butter and sugars: In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
Add wet ingredients: Beat in the mashed banana, egg, and vanilla extract until combined.
Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
Combine wet and dry: Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in the chocolate chips.
Bake: Drop tablespoon-sized scoops of dough onto the prepared baking sheet. Bake for 10–12 minutes until edges are lightly golden and centers are set.
Cool: Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
These cookies have a soft, cake-like texture thanks to the banana.
For extra flavor, try adding chopped walnuts or using dark chocolate chips.
