Wet Ingredients:

  • 1 ripe banana (mashed)
  • 1/2 cup unsalted butter (softened)
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Dry Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon

Mix-ins:

  • 1 cup semisweet chocolate chips

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream butter and sugars: In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add wet ingredients: Beat in the mashed banana, egg, and vanilla extract until combined.
  4. Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
  5. Combine wet and dry: Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in the chocolate chips.
  6. Bake: Drop tablespoon-sized scoops of dough onto the prepared baking sheet. Bake for 10–12 minutes until edges are lightly golden and centers are set.
  7. Cool: Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • These cookies have a soft, cake-like texture thanks to the banana.
  • For extra flavor, try adding chopped walnuts or using dark chocolate chips.
