For the Bars:
2 ripe bananas (mashed)
1/2cup unsalted butter (melted)
1/2cup brown sugar
1/4cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1cup all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1cup semisweet chocolate chips (plus more for topping, if desired)
Instructions
Preheat Oven and Prepare Pan: Preheat the oven to 350°F (175°C) and grease or line an 8×8-inch baking pan with parchment paper.
Mix Wet Ingredients: In a large bowl, whisk together the mashed bananas, melted butter, sugars, egg, and vanilla until smooth.
Combine Dry Ingredients: In a separate bowl, whisk the flour, baking soda, salt, and cinnamon. Add to the wet ingredients and stir until just combined.
Add Chocolate Chips: Fold in the chocolate chips.
Bake: Pour the batter into the pan, smooth the top, and add extra chocolate chips on top if desired. Bake for 25–30 minutes until a toothpick inserted in the center comes out clean or with a few moist crumbs.
Cool and Slice: Cool the bars completely in the pan before slicing into bars.
Notes
Use overripe bananas for the best flavor.
Add chopped walnuts or pecans for extra crunch.
These bars freeze well—wrap individually and store for up to 2 months.
