Wet Ingredients:

  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water or hot coffee

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line with parchment paper.
  2. Mix Dry Ingredients: In a large mixing bowl, sift together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. Combine Wet Ingredients: In another bowl, whisk together the eggs, milk, oil, and vanilla extract. Add the wet ingredients to the dry ingredients and mix until smooth.
  4. Add Boiling Water: Carefully stir in the boiling water or hot coffee (the batter will be thin).
  5. Bake: Divide the batter between the pans and bake for 30–35 minutes until a toothpick inserted comes out clean.
  6. Cool and Frost: Let cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely before frosting.
