1/2cup unsalted butter (softened)
1/2cup granulated sugar
1/2cup brown sugar (packed)
1 large egg
1 teaspoon vanilla extract
1/2 teaspoon almond extract
Mix-ins:
1cup semi-sweet chocolate chips
3/4cup dried cherries (roughly chopped)
1/2cup chopped walnuts or pecans (optional)
Instructions
Preheat the Oven: Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
Prepare Dry Ingredients: In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.
Cream Wet Ingredients: In a large mixing bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy. Add the egg, vanilla extract, and almond extract, and beat until well combined.
Combine and Bake: Gradually add the dry ingredients to the wet ingredients and mix until just combined. Fold in the chocolate chips, dried cherries, and nuts if using. Scoop the dough onto the prepared baking sheets and bake for 10–12 minutes.

Notes
For chewier cookies, do not overbake.
