Main Salad:

  • 3 cups cooked, shredded chicken (rotisserie or grilled)
  • 4 cups napa cabbage (shredded)
  • 2 cups romaine lettuce (shredded)
  • 1 cup red cabbage (shredded)
  • 1 cup shredded carrots
  • 1/2 cup sliced green onions

Additional Toppings:

  • 1/2 cup crispy chow mein noodles
  • 1/4 cup sliced almonds (toasted)
  • 1 tablespoon sesame seeds (optional)
  • For the Dressing:

    • 1/4 cup rice vinegar
    • 2 tablespoons soy sauce
    • 1 tablespoon sesame oil
    • 1 tablespoon honey
    • 1 tablespoon vegetable oil
    • 1 teaspoon grated fresh ginger
    • 1 garlic clove (minced)
    • pinch of red pepper flakes (optional)

Instructions

  1. Main Salad: In a large mixing bowl, combine the shredded chicken, napa cabbage, romaine, red cabbage, carrots, and green onions.
  2. For the Dressing: In a small bowl or jar, whisk or shake together the rice vinegar, soy sauce, sesame oil, honey, vegetable oil, ginger, garlic, and red pepper flakes until well blended.
  3. Pour the dressing over the salad and toss until everything is evenly coated.
  4. Top with crispy chow mein noodles, toasted almonds, and sesame seeds just before serving.
  5. Serve chilled or at room temperature.

Notes

  • You can add mandarin orange segments or edamame for variety.
  • If making ahead, wait to add the crunchy toppings and dressing until just before serving.
