  • 3 cups cooked and chilled jasmine or long-grain rice
  • 1 1/2 tablespoons oil (vegetable or sesame)

  • 6 garlic cloves (thinly sliced)
  • 2 dried red chilies (broken)
  • 1 small onion (finely chopped)
  • 1/2 cup bell pepper (chopped)
  • 1/2 cup chopped green onions (plus more for garnish)
  • 12 tablespoons soy sauce
  • 1 tablespoon chili garlic sauce or sambal oelek
  • 1 teaspoon vinegar (rice or white)
  • Salt to taste

Instructions

  1. Heat the Oil and Garlic: Heat oil in a large skillet or wok over medium heat. Add sliced garlic and cook until golden and crispy, about 1–2 minutes. Remove half for garnish.
  2. Sauté Aromatics: Add dried red chilies and onion to the remaining oil and sauté for 2 minutes until softened. Add bell pepper and green onions; stir-fry for another minute.
  3. Stir-Fry Rice: Increase heat to high, then add rice. Stir-fry vigorously for 2–3 minutes, breaking up clumps.
  4. Season and Finish: Add soy sauce, chili garlic sauce, and vinegar. Toss everything to coat evenly and cook another 2 minutes until the rice is hot and slightly crisp. Adjust salt if needed.
  5. Serve: Top with reserved crispy garlic and more green onions before serving.

Notes

  • Day-old rice gives the best texture for fried rice.
  • Add tofu, scrambled eggs, or shrimp for a protein boost.
  • Adjust chili level to taste.
