Chickpea Sloppy Joes Recipe

A hearty and flavorful vegetarian twist on the classic sloppy joes, made with protein-rich chickpeas and a savory tomato-based sauce.

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 (15-ounce) can chickpeas, drained and mashed
  • 1 (8-ounce) can tomato sauce
  • 2 tablespoons tomato paste
  • 1 tablespoon maple syrup
  • 1 tablespoon soy sauce
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 4 hamburger buns, for serving

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add the diced onion and bell pepper, sauté until softened, about 5 minutes.
  3. Stir in the minced garlic and cook for another 30 seconds.
  4. Add the mashed chickpeas, tomato sauce, tomato paste, maple syrup, soy sauce, chili powder, and smoked paprika.
  5. Season with salt and pepper to taste.
  6. Simmer for 10–15 minutes, stirring occasionally, until the mixture thickens.
  7. Spoon the mixture onto hamburger buns and serve warm.

Notes

  • You can add a dash of hot sauce for extra heat.
  • Leftovers keep well in the fridge for up to 3 days.
  • Serve with a side of coleslaw or pickles for extra crunch.
