For Chicken:

  • 2 boneless skinless chicken breasts
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper, to taste

For Avocado Salsa:

  • 1 large avocado, diced
  • 1 small tomato, diced
  • 1/4 cup red onion, finely chopped
  • 1 tablespoon lime juice
  • 1 tablespoon chopped cilantro

Instructions

  1. Preheat the oven: Preheat the oven to 425°F (220°C).
  2. Prepare Sweet Potato Fries: Toss sweet potato fries with 1 tablespoon olive oil, smoked paprika, garlic powder, salt, and pepper. Roast on a baking sheet for 25–30 minutes until crispy.
  3. Cook Chicken: Season chicken with olive oil, chili powder, cumin, salt, and pepper. Grill or pan-sear for 6–7 minutes per side until fully cooked.
  4. Make Avocado Salsa: Combine avocado, tomato, red onion, lime juice, and cilantro in a bowl. Season with salt.
  5. Serve: Slice chicken and serve with sweet potato fries and avocado salsa.
