2 medium sweet potatoes, cut into fries
2 tablespoons olive oil, divided
1 teaspoon smoked paprika
1/2 teaspoon garlic powder

For Chicken:
2 boneless skinless chicken breasts
1 teaspoon chili powder
1/2 teaspoon cumin
Salt and pepper, to taste
For Avocado Salsa:
1 large avocado, diced
1 small tomato, diced
1/4cup red onion, finely chopped
1 tablespoon lime juice
1 tablespoon chopped cilantro
Instructions
Preheat the oven: Preheat the oven to 425°F (220°C).
Prepare Sweet Potato Fries: Toss sweet potato fries with 1 tablespoon olive oil, smoked paprika, garlic powder, salt, and pepper. Roast on a baking sheet for 25–30 minutes until crispy.
Cook Chicken: Season chicken with olive oil, chili powder, cumin, salt, and pepper. Grill or pan-sear for 6–7 minutes per side until fully cooked.
Make Avocado Salsa: Combine avocado, tomato, red onion, lime juice, and cilantro in a bowl. Season with salt.
Serve: Slice chicken and serve with sweet potato fries and avocado salsa.
Notes
For extra crunch, soak sweet potato fries in water for 30 minutes before baking.
