- 1 lb boneless, skinless chicken thighs
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp onion powder
- Salt and pepper to taste
- Juice of 1 lime
- 8 small corn tortillas
- 1/2 cup diced white onion
- 1/2 cup chopped fresh cilantro
- 1/2 cup crumbled queso fresco (optional)
- Lime wedges for serving
Instructions
- In a bowl, combine olive oil, minced garlic, chili powder, cumin, paprika, onion powder, salt, pepper, and lime juice to create a marinade.
- Add chicken thighs to the marinade and let sit for at least 30 minutes, or up to 2 hours in the refrigerator.
- Preheat a grill or skillet over medium-high heat. Cook the chicken for about 5–6 minutes per side or until fully cooked and nicely charred.
- Remove chicken from heat, let rest for a few minutes, then dice into small pieces.
- Warm the corn tortillas on the grill or in a dry skillet until pliable.
- Assemble the tacos by adding chopped chicken to each tortilla, then topping with diced onion, chopped cilantro, and queso fresco if using.
- Serve immediately with lime wedges on the side.
Notes
- Chicken breasts can be used instead of thighs, but thighs provide more flavor and tenderness.
- Add avocado, salsa, or pickled onions for extra flavor.
- To save time, use pre-cooked or rotisserie chicken and simply warm it with spices.
