  • 1/2 cup thinly sliced cucumber
  • 1/2 cup cooked vermicelli rice noodles (optional)
  • 1/4 cup fresh cilantro leaves
  • 1/4 cup fresh mint leaves
  • 1/4 cup fresh basil leaves
  • 810 rice paper wrappers
  • warm water for soaking wrappers

For the Dipping Sauce (optional):

  • 1/4 cup hoisin sauce
  • 1 tablespoon peanut butter
  • 1 tablespoon soy sauce
  • 1 teaspoon rice vinegar
  • 1 teaspoon sriracha (optional)
  • 12 tablespoons warm water (to thin)

Instructions

  1. Prepare Ingredients: Set up an assembly line with all filling ingredients. Fill a dish with warm water.
  2. Soften Wrappers: Dip a rice paper wrapper in water until soft.
  3. Fill & Roll: Layer ingredients on the wrapper, fold sides, and roll tightly.
  4. Make Dipping Sauce: Whisk hoisin sauce, peanut butter, soy sauce, vinegar, sriracha, and water.
  5. Serve: Enjoy fresh spring rolls with dipping sauce.
