  • 12 oz spaghetti noodles

Chicken Mixture:

  • 2 cups cooked chicken breast, shredded
  • 1 can (10.5 oz) cream of chicken soup
  • 1 can (10 oz) Rotel diced tomatoes with green chilies, drained
  • 1 cup chicken broth
  • 1 small onion, diced
  • 1 green bell pepper, diced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper (optional)
  • 1 tsp salt
  • 1/2 tsp black pepper

Cheese:

  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Garnish:

  • Fresh parsley for garnish

Instructions

  1. Cook Spaghetti: Cook spaghetti noodles until al dente, drain, and set aside.
  2. Prepare Chicken Mixture: Sauté onion, bell pepper, and garlic. Add chicken, cream of chicken soup, Rotel tomatoes, broth, spices, and simmer.
  3. Combine: Toss cooked spaghetti with the chicken mixture and half of the cheeses.
  4. Bake: Transfer to a baking dish, top with remaining cheese and Parmesan. Bake at 350°F for 20-25 minutes.
  5. Garnish: Garnish with fresh parsley before serving.
