Chicken Souvlaki:

  • 1 1/2 lbs boneless, skinless chicken breast or thighs (cut into 1-inch cubes)
  • 3 tablespoons olive oil
  • juice of 1 lemon
  • 3 cloves garlic (minced)
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • wooden or metal skewers (if grilling)

Instructions

  1. Marinate the Chicken: In a large bowl, whisk together olive oil, lemon juice, garlic, red wine vinegar, oregano, salt, and pepper. Add the chicken pieces and toss to coat. Cover and marinate in the refrigerator for at least 1 hour, preferably up to 4 hours.
  2. Prepare the Skewers: If using wooden skewers, soak them in water for 30 minutes to prevent burning. Preheat a grill, grill pan, or broiler over medium-high heat. Thread the marinated chicken onto skewers.
  3. Grill the Chicken: Grill or broil for 10–12 minutes, turning occasionally, until the chicken is cooked through and lightly charred.
  4. Serve: Serve hot with warm pita, tzatziki sauce, and your favorite Greek toppings like cucumbers, tomatoes, olives, or red onion.
