Chicken Salad:
2cups cooked chicken breast (finely chopped or shredded)
1/3cup mayonnaise
1 tablespoon Dijon mustard
1 tablespoon lemon juice
1 celery stalk (finely diced)

1/4 teaspoon garlic powder
1/4 teaspoon salt
1/8 teaspoon black pepper
Assembly:
12 slices soft white or wheat sandwich bread
butter or margarine (optional, for spreading)
Instructions
In a medium bowl, prepare the chicken salad: Combine chopped chicken, mayonnaise, mustard, lemon juice, celery, red onion, parsley, garlic powder, salt, and pepper. Mix until creamy.
Assemble the sandwiches: Trim bread crusts if desired. Optionally butter one side of each slice. Spread chicken salad on half the slices and top with the remaining slices. Cut into smaller pieces.
