Instructions
- Heat olive oil: Place a pan over medium heat and add 2 tablespoons of olive oil, warming it before adding any ingredients.
- Sauté onion and garlic: Add the chopped onion and minced garlic to the pan, cooking until they become soft and fragrant, about 3-4 minutes.
- Cook chicken: Add the diced chicken breast to the pan and cook, stirring occasionally, until the chicken is browned and cooked through, approximately 5-7 minutes.
- Add Arborio rice: Stir in 1 cup of Arborio rice with the chicken and cook for 2 minutes, allowing the rice to lightly toast and absorb flavors.
- Deglaze with white wine: Pour in 1 cup of white wine and let it simmer while stirring until the liquid is mostly absorbed by the rice.
- Slowly add chicken broth: Gradually add 4 cups of chicken broth one cup at a time. Stir constantly, waiting for each cup to be absorbed before adding the next to develop a creamy texture.
- Finish with Parmesan: Once the rice is creamy and cooked al dente, stir in 1 cup of grated Parmesan cheese until melted and well combined.
- Season the risotto: Taste and season with salt and pepper according to your preference.
- Garnish and serve: Sprinkle freshly chopped parsley on top before serving to add a fresh, vibrant finish.
