For the Pozole:

  • 1 1/2 pounds boneless skinless chicken thighs
  • 1 tablespoon olive oil
  • 1 small onion (chopped)
  • 3 cloves garlic (minced)
  • 1 pound tomatillos (husked and halved)
  • 2 poblano peppers (seeded and chopped)
  • 1 jalapeño (seeded for less heat, chopped)
  • 1/2 cup chopped fresh cilantro
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 4 cups chicken broth
  • 1 can (25 ounces) hominy (drained and rinsed)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

For Garnish:

  • Lime wedges
  • Shredded cabbage
  • Radishes
  • Avocado
  • Tortilla chips

Instructions

  1. Prepare the Sauce: In a large pot, sauté onion, garlic, tomatillos, poblano peppers, and jalapeño. Blend with cilantro, cumin, oregano, and 1 cup of broth.
  2. Cook the Pozole: Return the sauce to the pot, add chicken, broth, hominy, salt, and pepper. Simmer until chicken is tender. Shred chicken and return to the pot.
  3. Finish and Serve: Simmer uncovered to blend flavors. Serve hot with garnishes.

Notes

  • Pozole verde is traditionally made with pork, but chicken offers a lighter, quicker version.
  • Adjust spice level by adding more or less jalapeño.
