Chicken Pomodoro:

  • 4 boneless skinless chicken breasts
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon Italian seasoning
  • 2 tablespoons olive oil

Sauce:

  • 4 cloves garlic (minced)
  • 3 cups cherry tomatoes (halved)
  • 1/4 cup dry white wine or chicken broth
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup fresh basil leaves (chopped)
  • Grated Parmesan cheese for serving

Instructions

  1. Season the chicken: Season the chicken breasts with salt, pepper, and Italian seasoning.
  2. Cook the chicken: Heat olive oil in a large skillet over medium-high heat. Cook the chicken for 5 to 6 minutes per side until golden brown and cooked through. Transfer to a plate and keep warm.
  3. Make the sauce: In the same skillet, reduce heat to medium and add garlic. Sauté for 30 seconds. Add cherry tomatoes, white wine (or broth), and red pepper flakes. Cook for 5 to 7 minutes until tomatoes burst.
  4. Combine: Return chicken to skillet, spoon sauce over the top, and simmer for 2 minutes. Sprinkle with basil and Parmesan before serving.
