Chicken Piccata is a classic Italian-American dish featuring tender chicken cutlets in a tangy lemon and caper sauce. This recipe is quick and easy to make, perfect for a flavorful weeknight dinner.

For the Chicken:

  • 2 boneless skinless chicken breasts (halved horizontally to make 4 cutlets)
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

For the Sauce:

  • 2 tablespoons unsalted butter (divided)
  • 1/3 cup dry white wine
  • 1/3 cup chicken broth
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons capers (drained)
  • 1 tablespoon chopped fresh parsley
  • lemon slices for garnish (optional)

Instructions

  1. Prepare the Chicken: Place the chicken cutlets between plastic wrap and pound to even thickness if needed.
  2. Dredge the Chicken: In a shallow bowl, mix the flour with salt and pepper. Dredge the chicken in the flour mixture, shaking off any excess.
  3. Cook the Chicken: Heat the olive oil and 1 tablespoon butter in a large skillet over medium-high heat. Add the chicken and cook for 3–4 minutes per side, until golden and cooked through. Transfer chicken to a plate and keep warm.
  4. Make the Sauce: In the same skillet, add white wine and chicken broth, scraping up browned bits from the bottom. Stir in lemon juice and capers. Simmer for 2–3 minutes, then whisk in the remaining tablespoon of butter.
  5. Finish the Dish: Return chicken to the skillet and spoon sauce over the top. Simmer for 1–2 more minutes to heat through. Garnish with parsley and lemon slices before serving.

Notes

  • Serve with angel hair pasta, rice, or steamed vegetables.
  • You can substitute wine with more broth if desired.
