  • 1 tablespoon olive oil
  • 1 pound boneless skinless chicken breasts (thinly sliced)
  • 1 green bell pepper (thinly sliced)
  • 1 small yellow onion (thinly sliced)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For Assembly:

  • 8 slider buns or dinner rolls
  • 6 slices provolone cheese
  • 2 tablespoons melted butter
  • 1/2 teaspoon dried Italian seasoning

Instructions

  1. Preheat and Cook Chicken: Preheat the oven to 350°F (175°C). Cook chicken in olive oil until browned and cooked through, about 5–6 minutes.
  2. Sauté Veggies: Add bell pepper and onion, cook until tender, about 4–5 minutes. Season with garlic powder, salt, and pepper.
  3. Assemble Sliders: Place bottom halves of buns in a baking dish. Top with chicken mixture, provolone, and bun tops.
  4. Bake: Brush tops with butter, sprinkle with Italian seasoning. Bake covered, then uncovered, until golden and cheese is melted, 10 minutes covered and 5–7 minutes uncovered.
  5. Serve: Serve warm.

Notes

  • You can swap provolone for mozzarella or pepper jack for extra spice.
  • Great served with fries, salad, or chips on the side.
