For the Chicken:

  • 4 boneless skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs (beaten)
  • 1 cup Italian-style breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup olive oil for frying

For Assembly:

  • 2 cups marinara sauce
  • 1 1/2 cups shredded mozzarella cheese
  • 1/4 cup chopped fresh basil or parsley (optional)

Instructions

  1. Preheat and Prep: Preheat the oven to 400°F (200°C). Pound chicken breasts, season with salt and pepper.
  2. Breading: Dredge chicken in flour, dip in beaten eggs, coat with breadcrumbs and Parmesan.
  3. Frying: Fry chicken in olive oil until golden and crispy.
  4. Assembly: Spread marinara in baking dish, place chicken, top with sauce, mozzarella. Bake until cheese melts.
  5. Serve: Garnish with basil or parsley and enjoy!
