Chicken:

  • 4 chicken breasts, bone-in, skin-on
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 1/2 cup pitted prunes
  • 1/4 cup pitted Spanish green olives

Marinade:

  • 3 cloves garlic, minced
  • 2 tablespoons dried oregano
  • Salt and pepper, to taste
  • 1/2 cup white wine
  • 1/4 cup capers with a bit of juice

Instructions

  1. Marinate the Chicken: In a large bowl, combine olive oil, red wine vinegar, prunes, olives, garlic, oregano, salt, pepper, white wine, and capers. Add the chicken breasts and marinate in the refrigerator for at least 2 hours or overnight.
