Chicken Madeira is a delicious and elegant dish featuring tender chicken breasts smothered in a rich mushroom and Madeira wine sauce, typically served with mashed potatoes or asparagus.

- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 tablespoon butter
- 2 cups sliced mushrooms (cremini or button)
- 1 cup Madeira wine
- 1 cup beef broth
- 1/2 cup heavy cream
- 1 teaspoon garlic, minced
- Salt and pepper to taste
- 2 cups asparagus, trimmed
- 1 cup shredded mozzarella cheese
- Fresh parsley for garnish (optional)
Instructions
- Season chicken breasts with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken breasts until golden brown on both sides and cooked through. Remove from skillet and set aside.
- In the same skillet, melt butter and sauté mushrooms until tender, about 5 minutes.
- Add garlic and cook for 1 minute until fragrant.
- Pour in Madeira wine and bring to a boil. Simmer for 5 minutes to reduce slightly.
- Add beef broth and simmer for another 10 minutes until reduced by half.
- Stir in heavy cream and return chicken to the skillet. Simmer for 5 minutes.
- While sauce simmers, steam or blanch asparagus until tender-crisp.
- Top chicken with mozzarella cheese and cover skillet until cheese melts.
- Serve chicken with sauce and asparagus on the side, garnished with parsley if desired.
Notes
- Use a meat mallet to pound chicken evenly for even cooking.
- Substitute Madeira wine with Marsala wine if needed.
- Serve with mashed potatoes or rice to soak up the sauce.
