Description

Chicken Madeira is a delicious and elegant dish featuring tender chicken breasts smothered in a rich mushroom and Madeira wine sauce, typically served with mashed potatoes or asparagus.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 2 cups sliced mushrooms (cremini or button)
  • 1 cup Madeira wine
  • 1 cup beef broth
  • 1/2 cup heavy cream
  • 1 teaspoon garlic, minced
  • Salt and pepper to taste
  • 2 cups asparagus, trimmed
  • 1 cup shredded mozzarella cheese
  • Fresh parsley for garnish (optional)

Instructions

  1. Season chicken breasts with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken breasts until golden brown on both sides and cooked through. Remove from skillet and set aside.
  3. In the same skillet, melt butter and sauté mushrooms until tender, about 5 minutes.
  4. Add garlic and cook for 1 minute until fragrant.
  5. Pour in Madeira wine and bring to a boil. Simmer for 5 minutes to reduce slightly.
  6. Add beef broth and simmer for another 10 minutes until reduced by half.
  7. Stir in heavy cream and return chicken to the skillet. Simmer for 5 minutes.
  8. While sauce simmers, steam or blanch asparagus until tender-crisp.
  9. Top chicken with mozzarella cheese and cover skillet until cheese melts.
  10. Serve chicken with sauce and asparagus on the side, garnished with parsley if desired.

Notes

  • Use a meat mallet to pound chicken evenly for even cooking.
  • Substitute Madeira wine with Marsala wine if needed.
  • Serve with mashed potatoes or rice to soak up the sauce.
