For the Chicken Fried Steak:

  • 4 cube steaks (about 46 oz each)
  • 2 cups buttermilk
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper
  • Salt and black pepper to taste
  • Vegetable oil for frying

For the Gravy:

  • 1/4 cup reserved frying oil
  • 1/4 cup all-purpose flour
  • 2 1/2 cups whole milk
  • Salt and black pepper to taste

Instructions

  1. Prepare the Chicken Fried Steak: In a shallow bowl, whisk together buttermilk and eggs. In another bowl, combine flour, paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper. Dip each cube steak into the flour mixture, then buttermilk, and back into the flour.
  2. Fry the Steaks: Heat vegetable oil in a skillet. Fry steaks for 3–4 minutes per side until golden brown. Drain on paper towels.
  3. Make the Gravy: Reserve 1/4 cup oil in the skillet. Whisk in flour and cook for 1–2 minutes. Gradually whisk in milk and cook until thickened. Season with salt and pepper.
  4. Serve: Plate the steaks and top with gravy.

Notes

  • Serve with mashed potatoes or biscuits for a classic Southern meal.
  • For extra-crispy crust, let the coated steaks rest for 10 minutes before frying.
