Ingredients

Units Scale

For the Steak Fingers:

  • 1 1/2 lbs cube steak cut into strips
  • 1 1/2 cups all-purpose flour
  • 1/2 cup cornstarch
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 2 large eggs
  • 1/2 cup buttermilk
  • vegetable oil for frying

Instructions

  1. Cut the cube steak into strips: Set aside.
  2. Prepare the breading: In a large bowl, whisk together the flour, cornstarch, baking powder, salt, pepper, garlic powder, onion powder, paprika, and cayenne.
  3. Prepare the egg mixture: In a separate bowl, beat the eggs and mix in the buttermilk.
  4. Coat the steak strips: Dip each strip into the egg mixture, then dredge in the flour mixture, pressing the coating onto the meat for better adherence.
  5. Double coating: For extra crunch, repeat the dipping process for a double coating.
  6. Rest the coated strips: Let them rest for 10–15 minutes to set the crust.
  7. Heat the oil: Heat vegetable oil in a skillet to 350°F (175°C).
  8. Fry the steak fingers: Fry in batches for 3–4 minutes per side until golden brown and crispy.
  9. Drain and serve: Transfer to a paper towel-lined plate and serve hot with gravy or sauce.

Notes

  • Resting the coated strips before frying helps prevent the breading from falling off.
  • For a spicier kick, increase the cayenne or add hot sauce to the buttermilk mixture.
