Ingredients

Units Scale
  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 4 cups fresh spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 tablespoon lemon juice (optional)

Instructions

  1. Season chicken breasts with salt, pepper, and Italian seasoning.
  2. In a large skillet, heat olive oil over medium heat. Add chicken and cook for 6–7 minutes on each side until golden and cooked through. Remove from skillet and set aside.
  3. In the same skillet, melt butter and sauté garlic for 1 minute until fragrant.
  4. Add chicken broth and simmer for 2 minutes, scraping up browned bits.
  5. Stir in heavy cream and Parmesan cheese. Cook until sauce thickens, about 3–4 minutes.
  6. Add spinach and cook until wilted, about 2 minutes.
  7. Return chicken to skillet and spoon sauce over it. Simmer for another 2–3 minutes.
  8. Add lemon juice if desired, and serve warm.

Notes

  • Use half-and-half instead of heavy cream for a lighter version.
  • Great served over pasta, rice, or mashed potatoes.
  • Can substitute chicken breasts with thighs for juicier meat.
