Chicken Fajita Rice Bowl:

  • 1 pound boneless, skinless chicken breasts, sliced into strips
  • 1 tablespoon olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 small red onion, sliced
  • 1 cup long grain white rice
  • 2 1/4 cups low-sodium chicken broth
  • 1 tablespoon fajita seasoning (store-bought or homemade)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • juice of 1 lime
  • optional toppings: chopped cilantro, shredded cheese, avocado, sour cream

Instructions

  1. Heat olive oil: In a large, deep skillet over medium-high heat, heat olive oil.
  2. Sauté chicken: Add chicken strips, sprinkle with half of the fajita seasoning, garlic powder, salt, and pepper. Sauté for 4 to 5 minutes until lightly browned.
  3. Cook vegetables: Add sliced bell peppers and onion to the pan and cook for another 3 to 4 minutes, stirring occasionally.
  4. Add rice and broth: Stir in rice, remaining fajita seasoning, and chicken broth. Bring to a boil, then cover, reduce heat to low, and simmer for 18 to 20 minutes until rice is tender.
  5. Finish and serve: Remove from heat, let sit covered for 5 minutes. Fluff with a fork, squeeze fresh lime juice over the top, and serve with desired toppings.

Notes

  • You can use brown rice—just increase broth to 2 3/4 cups and simmer for 35–40 minutes.
  • For extra heat, add a pinch of cayenne or sliced jalapeños.
  • Leftovers reheat well for meal prep.
