Chicken Cordon Bleu:

  • 4 boneless, skinless chicken breasts
  • 4 slices Swiss cheese
  • 4 slices deli ham
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large eggs (beaten)
  • 1 cup breadcrumbs (preferably Panko)
  • 2 tablespoons butter (melted)
  • optional: toothpicks to secure

Instructions

  1. Preheat the oven: to 375°F (190°C) and lightly grease a baking dish.
  2. Pound the chicken: between plastic wrap to 1/4-inch thickness. Season with salt and pepper.
  3. Layer ingredients: Place ham and cheese on chicken. Roll and secure with toothpicks.
  4. Dredge and coat: Roll in flour, dip in eggs, coat with breadcrumbs and butter.
  5. Bake: Place in dish and bake for 25–30 minutes until golden and internal temperature reaches 165°F (74°C).
  6. Rest and serve: Let rest 5 minutes, then slice and serve.
