For the Meatloaf:

  • 1 1/2 pounds ground chicken
  • 1/2 cup plain breadcrumbs
  • 1 large egg
  • 1/4 cup milk
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Filling:

  • 6 slices deli ham
  • 1 cup shredded Swiss cheese (divided)
  • 1 tablespoon chopped fresh parsley (optional for garnish)

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C) and prepare a loaf pan with parchment paper or grease.
  2. Mix the meatloaf: In a bowl, combine ground chicken, breadcrumbs, egg, milk, Dijon mustard, garlic powder, onion powder, salt, and pepper. Press half into the loaf pan.
  3. Layer the filling: Add ham slices, half of the Swiss cheese, then the remaining meat mixture. Bake for 45–55 minutes.
  4. Finish baking: Sprinkle the remaining Swiss cheese on top and bake until melted. Rest before slicing and garnish with parsley.

Notes

  • For a crispier top, broil for 1–2 minutes after adding the cheese.
  • You can use Gruyère as a Swiss cheese alternative.
