Chicken and Salad
- 2 small chicken breasts
- 1 bottle of your favorite Caesar dressing
- Fresh black pepper (to taste)
- 4 slices bacon
- 1 head Romaine lettuce, chopped
- ½ cup grated Parmesan cheese, divided
- Juice from half a lemon (optional)
Garlic Bread
- 1 loaf French bread
- ¼ cup salted butter, softened
- 2 cloves garlic, minced
- 1 cup shredded Mozzarella cheese

- Bake the Chicken: Preheat the oven to 375°F. Spray a small baking dish with non-stick spray. Place the chicken breasts in the dish and pour ¼ cup of Caesar dressing evenly over them. Season with fresh black pepper. Bake for 25 minutes, or until the internal temperature reaches 165°F. Allow to rest for at least 5 minutes before dicing.
- Cook the Bacon: While the chicken bakes, cook the bacon in a skillet until crispy. Transfer to a paper towel-lined plate to drain excess grease, then chop into pieces.
- Prepare the Salad: In a large bowl, combine chopped Romaine lettuce, ¼ cup Caesar dressing, diced chicken, bacon pieces, and ¼ cup Parmesan cheese. Season with black pepper and gently toss to combine. Set aside.
- Make the Garlic Bread: Preheat the oven to broil. Slice the French bread in half lengthwise and place cut side up on a baking sheet. Mix softened butter with minced garlic and spread evenly over the bread halves. Sprinkle with shredded Mozzarella cheese. Broil until the cheese melts, about 1 minute, watching carefully to prevent burning.
- Assemble and Serve: Remove the garlic bread from the oven carefully. Top both halves evenly with the chicken Caesar salad mixture. Sprinkle the remaining Parmesan cheese over the top. Slice and serve with extra Caesar dressing and a squeeze of fresh lemon juice if desired. Enjoy!
