Chicken Cacciatore is a classic Italian chicken stew that is full of flavor and perfect for a comforting meal. This recipe features tender chicken pieces simmered in a rich tomato-based sauce with peppers, onions, and savory spices.

Chicken:

  • 4 bone-in, skin-on chicken thighs
  • 4 bone-in chicken drumsticks

Other Ingredients:

  • 2 tablespoons olive oil
  • 1 medium onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 3 cloves garlic, minced
  • 1/2 cup dry white wine
  • 1 (28-ounce) can crushed tomatoes
  • 1/2 cup chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1/2 cup sliced black olives
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Season the chicken: Generously season chicken thighs and drumsticks with salt and pepper.
  2. Sear the chicken: Heat olive oil in a large skillet or Dutch oven. Sear chicken until browned on both sides, about 4–5 minutes per side. Remove and set aside.
  3. Cook vegetables: In the same skillet, cook sliced onion and bell peppers until softened. Add garlic and cook for 1 minute.
  4. Add liquids and spices: Pour in white wine, then add crushed tomatoes, chicken broth, oregano, basil, and red pepper flakes. Stir in olives.
  5. Simmer: Return chicken to the pan, reduce heat, cover, and simmer for 35–40 minutes until chicken is cooked through.
  6. Thicken sauce and serve: Uncover for the last 10 minutes to thicken sauce if desired. Garnish with parsley and serve hot over pasta, rice, or polenta.

Notes

  • You can substitute boneless chicken but reduce simmering time by about 10 minutes.
  • For extra flavor, add a splash of balsamic vinegar to the sauce before serving.
