  • 2 cups cooked white rice
  • 2 cups cooked chicken (shredded or cubed)
  • 2 cups broccoli florets (steamed or blanched)
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 cups shredded cheddar cheese (divided)

For the Topping (Optional):

  • 1/2 cup crushed buttery crackers or breadcrumbs
  • 2 tablespoons melted butter

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Mix the ingredients: In a large mixing bowl, combine the cooked rice, chicken, broccoli, cream of chicken soup, sour cream, milk, garlic powder, onion powder, salt, pepper, and 1 cup of cheddar cheese. Mix well.
  3. Assemble: Spread the mixture in the baking dish. Top with the remaining cheddar cheese. If using a topping, mix crushed crackers or breadcrumbs with melted butter and sprinkle over the casserole.
  4. Bake: Bake for 25–30 minutes until hot and bubbly with melted cheese.
  5. Serve: Let it sit for 5 minutes before serving.

  • You can use rotisserie chicken for convenience.
  • Frozen broccoli can be used; thaw and drain before adding.
