For the Casserole:
2cups cooked white rice
2cups cooked chicken (shredded or cubed)
2cups broccoli florets (steamed or blanched)
1 can (10.5 oz) cream of chicken soup
1/2cup sour cream
1/2cup milk
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 1/2cups shredded cheddar cheese (divided)
For the Topping (Optional):
1/2cup crushed buttery crackers or breadcrumbs
2 tablespoons melted butter
Instructions
Preheat the oven: Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish.
Mix the ingredients: In a large mixing bowl, combine the cooked rice, chicken, broccoli, cream of chicken soup, sour cream, milk, garlic powder, onion powder, salt, pepper, and 1 cup of cheddar cheese. Mix well.
Assemble: Spread the mixture in the baking dish. Top with the remaining cheddar cheese. If using a topping, mix crushed crackers or breadcrumbs with melted butter and sprinkle over the casserole.
Bake: Bake for 25–30 minutes until hot and bubbly with melted cheese.
Serve: Let it sit for 5 minutes before serving.
Notes
You can use rotisserie chicken for convenience.
Frozen broccoli can be used; thaw and drain before adding.
For a lighter version, use Greek yogurt instead of sour cream.
