  • 1 tablespoon olive oil
  • 1 small yellow onion, diced
  • 2 carrots, peeled and sliced
  • 2 celery stalks, diced
  • 2 garlic cloves, minced
  • 6 cups low-sodium chicken broth
  • 1 bay leaf
  • 1/2 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup stelline (star-shaped pasta)
  • 2 cups cooked shredded chicken (breast or rotisserie)
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the onion, carrots, and celery, and sauté for 5–6 minutes until vegetables are softened.
  2. Stir in garlic and cook for another 30 seconds.
  3. Pour in the chicken broth and add the bay leaf, thyme, salt, and pepper. Bring to a boil.
  4. Add the star pasta and cook for about 6–8 minutes, or until tender.
  5. Stir in the shredded chicken and cook for another 2–3 minutes until heated through.
  6. Remove the bay leaf and season with additional salt and pepper to taste.
  7. Garnish with chopped parsley before serving if desired.
