Chicken:

  • 2 tablespoons olive oil
  • 1 pound boneless skinless chicken breasts, cut into strips

Mushrooms:

  • 8 ounces cremini or button mushrooms, sliced

Sauce:

  • 3 garlic cloves, minced
  • 2 tablespoons unsalted butter
  • 1 1/2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Cook the Pasta: Boil salted water and cook fettuccine until al dente. Reserve 1/2 cup pasta water.
  2. Cook the Chicken: Season and cook chicken in olive oil until golden and cooked through.
  3. Sauté Mushrooms: In the same skillet, cook mushrooms until browned. Add garlic and butter.
  4. Make the Sauce: Pour in cream, simmer, then add Parmesan, seasonings, and cooked chicken.
  5. Combine: Toss in pasta, adding reserved water if needed. Garnish with parsley.

Notes

  • For a lighter version, use half-and-half instead of heavy cream.
  • You can substitute shrimp for chicken for a seafood twist.
  • Freshly grated Parmesan works best for a smooth, creamy sauce.
