  • 1 medium onion, diced
  • 2 carrots, diced

  • 3 garlic cloves, minced
  • 6 cups chicken broth
  • 2 cups cooked shredded chicken
  • 1 cup frozen peas
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper, to taste

For the Dumplings:

  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 Tbsp cold butter, cubed
  • 1/2 cup milk

Instructions

  1. Sauté Vegetables: In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery; sauté until softened, about 5 minutes.
  2. Add Broth and Chicken: Stir in garlic, then add chicken broth, shredded chicken, thyme, bay leaf, salt, and pepper. Bring to a simmer and cook for 10 minutes.
  3. Prepare Dumplings: Whisk together flour, baking powder, and salt. Cut in cold butter until mixture resembles coarse crumbs, then stir in milk to form a soft dough.
  4. Cook Dumplings: Drop spoonfuls of dough into simmering soup, cover, and cook for 15 minutes without lifting the lid to allow dumplings to steam.
  5. Finish Soup: Stir in frozen peas and simmer for an additional 5 minutes. Remove bay leaf and serve hot.
