Ingredients

Pasta:

12 ounces pasta (penne or fettuccine)

Chicken:

1 pound boneless skinless chicken breasts (cut into bite-sized pieces)

Other:

2 tablespoons olive oil, 3 cloves garlic (minced), 3 cups broccoli florets, 1 cup chicken broth, 1 cup heavy cream, 1/2 cup grated Parmesan cheese, 1/2 teaspoon salt, 1/4 teaspoon black pepper, 1/4 teaspoon crushed red pepper flakes (optional), chopped parsley for garnish (optional)

Instructions

  1. Cook the Pasta: Cook the pasta according to package instructions. In the last 2 minutes of cooking, add the broccoli florets. Drain and set aside.
  2. Cook the Chicken: Heat olive oil in a skillet, cook seasoned chicken until golden. Add garlic, then pour in chicken broth and simmer.
  3. Make the Sauce: Stir in heavy cream, Parmesan cheese, and red pepper flakes. Simmer until thickened.
  4. Combine and Serve: Add pasta and broccoli to the skillet. Toss to coat in the sauce. Garnish with parsley and serve hot.

Notes

  • For a lighter version, use half-and-half instead of cream.
  • You can substitute the chicken with shrimp or use whole wheat pasta for extra fiber.
