For the Lasagna Rolls:

  • 8 lasagna noodles
  • 2 cups shredded cooked chicken
  • 1 1/2 cups Alfredo sauce
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste

For Garnish:

  • Additional Parmesan cheese
  • Fresh parsley

Instructions

  1. Preheat and Prepare: Preheat the oven to 375°F (190°C). Cook the lasagna noodles according to package instructions until al dente. Drain and set aside.
  2. Mix Filling: In a bowl, combine the shredded chicken, Alfredo sauce, 1 cup of mozzarella, Parmesan, chopped parsley, salt, and pepper.
  3. Assemble: Lay out a cooked lasagna noodle, spread a generous amount of the chicken mixture over the noodle, then roll it up. Repeat for the remaining noodles.
  4. Bake: Spread some Alfredo sauce on the bottom of a baking dish. Place the lasagna rolls seam side down in the dish. Top with more Alfredo sauce and the remaining mozzarella cheese.
  5. Bake: Cover the dish with foil and bake for about 20 minutes. Remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and golden.
  6. Serve: Garnish with additional Parmesan cheese and fresh parsley before serving.
