For the cookies:
1/2cup unsalted butter, softened
1/2cup creamy peanut butter
1cup brown sugar
1/4cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1 1/4cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 1/2cups chopped Butterfinger candy bars
Instructions
Preheat the oven: Preheat the oven to 350°F and line two baking sheets with parchment paper.
Mix wet ingredients: In a large bowl, cream together softened butter, peanut butter, brown sugar, and granulated sugar until light and fluffy. Beat in the egg and vanilla extract until smooth.
Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
Add Butterfinger: Fold in the chopped Butterfinger pieces.
Bake: Scoop tablespoon-sized portions of dough onto the prepared baking sheets. Bake for 9–11 minutes until edges are set and centers are slightly soft.
Cool: Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
For extra chewiness, slightly underbake the cookies.
These freeze well and are perfect for make-ahead treats.
For a crunchier version, let them bake an additional 1–2 minutes.
