For the Coconut Bars:
1/2cup unsalted butter, melted
1cup brown sugar, packed
2 large eggs
1 teaspoon vanilla extract
1/2 teaspoon salt
1cup all-purpose flour
1 1/2cups shredded sweetened coconut
Instructions
Preheat the oven: Preheat the oven to 350°F and lightly grease or line an 8×8-inch baking pan with parchment paper.
Mix butter and sugar: In a medium bowl, whisk together melted butter and brown sugar until smooth.
Add eggs and vanilla: Beat in eggs and vanilla extract until well combined.
Combine dry ingredients: Stir in salt and flour just until incorporated.
Add coconut: Fold in the shredded coconut.
