Units Scale

Dry Ingredients:

  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon (optional)

Wet Ingredients:

  • 3/4 cup unsalted butter, melted and slightly cooled
  • 1 3/4 cups packed light brown sugar
  • 1 large egg plus 1 egg yolk
  • 1 tablespoon vanilla extract

Instructions

  1. Preheat and Prepare: Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon if using.
  3. Combine Wet Ingredients: In a large bowl, whisk the melted butter and brown sugar until smooth. Add the egg, egg yolk, and vanilla extract; whisk until combined.
  4. Form Dough: Gradually add the dry ingredients to the wet mixture, stirring until a soft dough forms.
  5. Bake: Scoop tablespoon-sized portions of dough, roll into balls, and place on baking sheets. Bake for 9–11 minutes until edges are lightly golden.
  6. Cool and Enjoy: Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • For extra chewiness, avoid overbaking the cookies.
  • Chilling the dough for 30 minutes before baking results in thicker cookies.
